New Sandwich and Salad Bar Brings Fresh Energy to Bridlington Old Town

A young entrepreneur has injected new life into Bridlington Old Town with the launch of Lillies Sandwich and Salad Bar, supported by East Riding of Yorkshire Council’s Business Support Services team.
Local university graduate Lillie Benson opened her new venture in June 2025, transforming a small former café into a vibrant takeaway sandwich and salad bar in one of the town’s most historic and characterful streets.
Before opening, Lillie accessed a range of start‑up support from the council’s business support services team. This included guidance on developing her business plan and financial forecasts, exploring funding opportunities, understanding grant eligibility and attending the council’s ‘Is Starting a Business Right for Me?’ workshop.
The support forms part of a wider programme funded by the UK Government through the UK Shared Prosperity Fund, which aims to help new and growing businesses across the East Riding to start, scale and create local employment.
Lillies Sandwich and Salad Bar offers freshly made sandwiches, salads and a selection of sweet treats baked on site using Lillie’s own home‑grown recipes—often perfected after a full day of trading. The business has already exceeded its initial footfall expectations, received excellent customer feedback and created two local jobs, including Lillie’s own role.
Council leader Cllr Anne Handley said:
“We’re proud to support a business‑friendly environment and it’s fantastic to see young people taking the initiative to start their own businesses here in East Yorkshire. Invest East Yorkshire provides a wide range of free support for aspiring entrepreneurs, including workshops on business planning, finance, legal requirements and marketing, as well as access to start‑up grants to help with early costs.
